Fourth of July is right around the corner, and I still cannot believe it! Although it still feels like spring, the weather is telling me it is not. This holiday comes and goes quickly every year, but it is always a fun day for all ages. Growing up, I spent every Fourth of July in New York *sigh*, sometimes watching the fireworks at the beach, or setting them off during many a barbecue at my Uncle’s house. Fireworks are probably the best part, but let’s be honest, this holiday like every other, is a day of eating, and I’ve got the perfect celebratory late night dessert for you! This brown butter pizookie is warm, soft and ooey gooey with bits of chocolate chips for that classic cookie taste. I also added red, white & blue sprinkles for a festive touch. This would be absolutely perfect to cuddle up with and share with friends or family while watching fireworks! It would be a great tradition to make and indulge in every year!:) Or of course, you can enjoy it any time of year, and even switch up the sprinkles per holiday. Let me show you how easy it is.

Begin by prepping the brown butter. Place one stick of butter in a small sauce pan and place on the stove at medium heat. Once melted, swirl the pot consistently until the butter reaches a nice amber color. Remove from heat immediately and pour into a glass bowl. At this point you can also add the flour, baking soda, and salt to a large bowl and whisk together.

After a couple minutes (**see notes,) add the white sugar, brown sugar, egg and vanilla extract to the browned butter and mix until incorporated. Set aside.

Add the brown butter sugar mixture to the flour and mix until combined. It may not look like it’ll come together, but keep at it and all will be fine!

Next, just add the chocolate chips and the sprinkles! Fold it all together, and press into an 8 inch pan. 

I pressed extra sprinkles into the top to make sure they would show, it’s just an extra step for appearance! Optional of course 🙂

Bake for about 15 minutes depending on how gooey you want it to turn out. I think 15 is just perfect, as it’ll be soft but not melty, but you can check it a few minutes prior or after depending on what you like.

Serve with your favorite flavor ice cream and dig in! I use plain and simple vanilla, I think you’ll find with the brown butter that that is all you need 🙂

Brown Butter Pizookie
Ingredients
- 1 stick butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup sprinkles optional
- ice cream to top optional but reccomended
Instructions
- Pre-heat the oven to 350 degrees Fahrenheit.
- In a large bowl, mix together the flour, baking soda and salt. Set aside.
- In a small saucepan, melt the butter over medium heat on the stove and swirl until it browns. Immediately pour into a glass bowl.
- After a couple minutes, add the egg, vanilla, and both sugars to the brown butter and mix until combined.
- Add this mixture to the flour mixture and fold until combined. Add the sprinkles and chocolate chips and fold again.
- Press into an 8-inch baking dish and bake for about 15 minutes. You can check it a little before or after if you prefer it more or less gooey.
- Let cool for about 5 minutes and serve with your ice cream of choice. Enjoy!
