Easter is right around the corner and I wanted to make a festive treat to celebrate! Although Easter is going to be different this year, if you can bring yourself to make a favorite dish or dessert, I would definitely recommend it to keep some normalcy and happiness into the holiday 🙂 I wanted to keep it really uncomplicated, so I decided to make these soft and chewy sugar cookies, with an added dose of fun of course (AKA sprinkles)! Funfetti makes everything better right? Plus, these little bunny sprinkles are just too cute. This would be a perfect treat to make with kids too, they’re a simple classic that have that nostalgic taste. Let me show you how to make them!

The first step is creaming the butter and sugar. I did this in my stand mixer for 5 minutes. Do not skip this! This step will ensure the cookies are soft and not too flat. By the end of the five minutes the butter and sugar should be very white and fluffy!

Next, add an egg, vanilla extract, and almond extract. I added clear vanilla extract but regular vanilla will do. The difference between the two is regular vanilla has a more classic, rich flavor, whereas clear vanilla has more of that nostalgic boxed confetti mix taste. Whatever floats your boat is fine! I think the clear vanilla is fun for recipes like this 🙂 Mix until combined.
Sift the dry ingredients into a medium bowl and whisk. Again, sifting these ingredients will help result in a softer cookie! Not the end of the world if you don’t have a sifter, the cookie will just be slightly different! Add the dry ingredients to the wet and mix on low speed to combine.
Add as many sprinkles as you like and mix to combine. I added about 1/3 cup. You should always use confetti sprinkles or jimmies when you’re baking sprinkles into something, because they bleed the least and hold up the best! I used rainbow jimmies on the inside and put Easter confetti sprinkles on top after baking! Refrigerate the dough for 3o minutes before baking to stop the cookies from spreading too much in the oven.

After the 30 minutes, scoop about 1 1/2 tbsp of dough out and form little balls of dough. Press down slightly, and bake for 11-12 minutes!

Let cool, add more sprinkles if you’d like, and enjoy! See, simple and easy 🙂

Spring Funfetti Sugar Cookies
Ingredients
- 1 stick butter unsalted
- 3/4 cup granulated sugar
- 1 egg large
- 1 tsp clear vanilla extract
- 1/4 tsp almond extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cornstarch
- 1/3 cup confetti sprinkles
Instructions
- In a large bowl with a hand mixer, or in the bowl of your stand mixer, cream the butter and sugar together for 5 minutes on medium high speed.
- Add the egg, vanilla extract, and almond extract. Mix to combine.
- Sift together the dry ingredients in a separate bowl. Add to the wet ingredients and gently mix until fully combined. Add the sprinkles and mix until evenly dispersed.
- Let the dough chill in the fridge for 30 minutes.
- Scoop dough out into 1 1/2 inch balls and place on a cookie sheet that has been lined with parchment paper.
- Bake for 11-12 minutes at 350 degrees Fahrenheit. Add more sprinkles to top.
- Let cool and enjoy!
