Healthy Strawberry Almond Granola

Hi everyone! I hope you’re still doing okay during all of this. I know staying home is difficult, but please do your best to stay home and stay safe! Cooking and baking has been a really good outlet for me during this, and I think you’re really going to like today’s recipe. It’s easy, delicious, and healthy, three things we all need in our diet right now! Strawberry flavored anything has always been my favorite, and I’m always trying to find ways to incorporate these sweet berries into different meals. The other day I decided to try and make strawberry granola, and let me tell ya, if you love strawberry like me, you’re going to love this!

To get most of the strawberry flavor, we’re going to use freeze dried strawberries and crush them into a powder. Adding this with the dry ingredients will ensure a strawberry flavor throughout! I just put mine in a blender, super easy. You’ll need about a half cup.

Add the strawberry “powder” to a bowl with the oats, slivered almonds, and salt. Mix together.

In a separate bowl, add the maple syrup, sunflower oil, butter, vanilla and almond butter. Place in the microwave or pour into a pot and place on the stove. Let the ingredients melt together. The main reason for this is so the oil doesn’t separate from some of the ingredients, and becomes more of a cohesive consistency. This way, when we add the wet ingredients to the dry, the oats are evenly coated with all the flavors included in the mixture. Plus, almond butter tastes even better warmed up, just sayin’.

Add the wet ingredients to the dry and mix together until evenly incorporated. Slice up some strawberries very thinly, as many or little as you want! Add them to the bowl and fold them into the mixture.

Spread the granola onto a sheet pan lined with parchment paper. Bake for 28-30 minutes, stirring every 8 minutes or so. Let cool completely and enjoy!

Ingredients
  

  • 4 cups rolled oats gluten free if necessary
  • 1 cup slivered almonds
  • 1/2 cup freeze-dried strawberry powder
  • 1 tsp salt
  • 1/2 cup maple syrup
  • 1 tbsp almond butter
  • 1/4 cup sunflower oil
  • 1/4 cup butter can sub coconut oil or ghee
  • 1 tsp vanilla
  • strawberries thinly sliced

Instructions
 

  • Add the oats, almonds, strawberry powder and salt to a bowl. Mix to combine.
  • In a separate bowl, combine the maple syrup, almond butter, sunflower oil, butter and vanilla. Heat in the microwave until it becomes a smooth consistency.
  • Add the wet ingredients to the dry and mix until fully combined. Add some sliced strawberries and fold to combine. I probably only used 1/3 cup. You don't want too many, otherwise it might add more unwanted moisture to the granola.
  • Spread evenly on a baking sheet and bake at 325 degrees Fahrenheit for 28-30 minutes, until lightly golden. It will continue to harden out of the oven.
  • Let cool completely and enjoy!
